Since toddlers can be very moody, we almost always end up having bananas which become overripe! What better than a nice little bread with some chocolate to save those bananas going into trash? So here's what i usually do:
Ingredients:
- All purpose Flour(2 cups)
- Overripe bananas(1 1/2 - 2 large )
- Salt(1 tsp)
- Baking Powder(1 tsp)
- Baking Soda(1 tsp)
- Eggs (2 large)
- Brown Sugar( This gives a nice color. Regular sugar/Maple Syrup can be used instead -1 Cup)
- Curd( I sometimes use Mascarpone - 3 tbsp)
- Cocoa Powder(1/4 cup)
- Chocolate chips
- Chocolate Sauce(This is optional)
- Melted or semi-melted Butter( 2oz / 1/2 stick)
Recipe:
- Prepare a pan by putting some wax paper and spraying Spray oil all over and set aside
- In a bowl , add 1 1/2 cups of flour, salt,Baking Powder and Baking Soda. Mix well and set aside
- In another bowl, take the butter , add sugar and curd. Mix very well using a hand mixer. this should me done for at least 4-5 minutes. This is a key step to get a good rise for the bread
- Next add in the eggs one at a time. If you feel adventurous try mixing the whites and fluffing them up. Then add it to the mix alongwith the yolk. Mix the whole thing well
- Add the flour mix next and mix in small amounts till completely blended. Do not over mix or the bread will stiffen
- Add the bananas and mix it in
- If you want to add nuts, pecan etc, now would be the time to do so. This can be put in the oven for a regular banana bread. The next few steps are completely optional and only relevant for a chocolate cake
- Now take another bowl and pour half of the mixture in
- In the first bowl add the remaining flower and mix it in. This will be the banana batter
- In the other bowl, add the chocolate powder, some chocolate chips ,a little chocolate sauce and mix well
- Now scoop and put the each batter alternately in the pan. It will mingle with each other which is ok
- Gently give a swirl or two with a butter knife
- Put it in the oven(Preheated to 350 F). It should be done by 40-45 minutes. Insert a toothpick and check that it comes out clean from multiple areas within the bread
- Set aside to cool before slicing it
