Spicy Mexican Eggs

Ingredients:
  • Corn Tortillas(5 - i used homemade Roti)
  • Onion(1/2 large) and some to garnish
  • Ginger(double of garlic)
  • Garlic(1 large)
  • Tomatoes(1-2 mashed)
  • Green Chillies(3-4)
  • Corn(1/2 cup)
  • Garbanzo beans(1/2 can - i used Rajma - Indian Kidney Beans soaked overnight and boiled)
  • Eggs(4-5 large)
  • Olive oil(2 tbsp, you can use any other oil too)
  • Cumin seeds(1 tbsp)
  • Salt to taste
  • Pepper to taste
  • Shredded cheese
  • Chilli flakes
  • Chopped Fresh Coriander leaves to Garnish
Recipe:
  • Chop the Onion, garlic and ginger to very fine pieces
  • Chop the green chillies. You can use less if you want less spicy
  • Add Olive oil in a hot pan and put all these in
  • Fry for a minute and mix well. Then add the cumin
  • Fry well, till the mix becomes brown and all raw smell is gone
  • Add the tomatoes and mix well
  • Add the corn and cook for a minute or two
  • Now lower the heat to sim and add the beans. mix well and let it rest for the flavors to soak in
  • Coat an oven safe pan with some oil and salt
  • Cut the tortillas and place it around the circumference. and place one whole in the middle. The formation will  look like a fully bloomed flower
  • Next put the veggie mix and spread it to cover the layered pan bottom.Level it to be even
  • Now with an egg make small dents along the surface. The dents will hold the eggs which needs to be poached. The number of dents will equal the number of eggs
  • Now break each egg carefully and put in each dent. It will look like the below.
  • Sprinkle a healthy dose of shredded cheese and chili flakes
  • Bake it in an oven pre-heated to 350F  for about 15 mins
  • Garnish with chopped onions and coriander
